- 1 can chicken breast
- 1 can black beans
- 1 can ranch style beans or pinto beans
- 1 can Rotel tomatoes and green chilies
- 1 can whole kernel corn
- 1 can low sodium chicken broth OR 2 cups water
- 1 can green enchilada sauce
- 1/4 cup dried chopped onion
- 1 pkg taco seasoning mix
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
Drain and rinse chicken, corn, and beans
1 can chicken breast, 1 can black beans, 1 can ranch style beans or pinto beans, 1 can whole kernel corn
Combine all ingredients in large stock pot and mix well
1 can Rotel tomatoes and green chilies, 1 can low sodium chicken broth OR 2 cups water, 1 can green enchilada sauce, 1/4 cup dried chopped onion, 1 pkg taco seasoning mix, 1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp chili powder
Heat to boiling, then reduce heat and simmer 15-20 minutes.
