Ingredients

  • 1 can chicken breast
  • 1 can black beans
  • 1 can ranch style beans or pinto beans
  • 1 can Rotel tomatoes and green chilies
  • 1 can whole kernel corn
  • 1 can low sodium chicken broth OR 2 cups water
  • 1 can green enchilada sauce
  • 1/4 cup dried chopped onion
  • 1 pkg taco seasoning mix
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder

Instructions

  • Drain and rinse chicken, corn, and beans
    1 can chicken breast, 1 can black beans, 1 can ranch style beans or pinto beans, 1 can whole kernel corn
  • Combine all ingredients in large stock pot and mix well
    1 can Rotel tomatoes and green chilies, 1 can low sodium chicken broth OR 2 cups water, 1 can green enchilada sauce, 1/4 cup dried chopped onion, 1 pkg taco seasoning mix, 1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp chili powder
  • Heat to boiling, then reduce heat and simmer 15-20 minutes.
